    Vanilla Bean Teacake with Vanilla Sugar Topping

    With its delicate texture and sweet vanilla sugar topping, this simple teacake is perfect for afternoon tea. Quick and easy to make, it is delicious served warm with vanilla-scented whipped cream.

    Ingredients

    Teacake

    • 5 tablespoons unsalted butter, softened (65g)
    • ½ cup granulated sugar
    • Seeds scraped from 1 Heilala Vanilla Bean, or 1 teaspoon Heilala Vanilla Paste
    • 1 large egg, lightly beaten
    • 1 cup all-purpose flour
    • 1½ teaspoons baking powder
    • ½ cup milk

    Topping

    • 1 tablespoon unsalted butter, melted
    • 1 tablespoon Heilala Vanilla Sugar

    Method

    1. Preheat the oven to 350°F (180°C). Line the base of an 8-inch round cake pan with parchment paper.
    2. Place the butter, granulated sugar and vanilla bean seeds or vanilla paste in a bowl. Using an electric mixer, beat until light and fluffy. Add the egg and beat until well combined.
    3. Sift together the flour and baking powder. Fold half of the flour mixture into the batter, followed by half of the milk. Repeat with the remaining flour mixture and milk, mixing until just combined.
    4. Spoon the batter into the prepared cake pan and smooth the surface.
    5. Bake for 25–30 minutes, or until a skewer inserted into the center comes out clean.
    6. Allow the teacake to stand in the pan for 10 minutes, then carefully turn it out onto a wire rack to cool slightly.
    7. Brush the top of the cake with the melted butter, then sprinkle evenly with Heilala Vanilla Sugar.
    8. Serve warm with whipped cream flavored with a dash of Heilala Vanilla Paste.
