    Vanilla Candied Nuts

    Serves: 4

     

    Ingredients:

    • 125g whole-blanched almonds
    • 160g caster sugar (granulated sugar)
    • 160ml water
    • 1 tsp vanilla extract

     

    Method:

    Place the water, sugar and vanilla into a saute pan or wok. Bring to the boil and add the nuts.

     Allow the sugar syrup to reduce and stir regularly until the liquid evaporates and the sugar crystallizes, this should take about 15 - 20 minutes.

     Stir constantly until each nut is coated in the sugar.
